Recipe To Try - Pioneer Woman's Chipotle Salsa
I checked out the Pioneer Woman's new book at the library last week. It's such a pretty book - pretty colors, cute kids and dogs and gorgeous horses...oh, yeah, the food ain't too shabby either.
I'm going off of memory here on this recipe since I've already returned the book and ding dong me took a picture of the recipe on my phone and then deleted it after I made the salsa thinking I could easily find the recipe online somewhere - not so easy!
You're going to want to try this salsa. I thought it was delicious. It's a little on the hot side even though we only used one chipotle. I'm a wimp when it comes to hot stuff though.
Pioneer Woman's Chipotle Salsa (from my memory)
2 cans diced tomatoes
1 can Rotel
1 onion diced
1 garlic clove minced (or a teaspoon of jarred garlic)
1 chipotle pepper in adobo sauce (you know, the canned stuff)
1 teaspoon cumin
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon ground black pepper
bunch of cilantro with stems whacked off
1/4 cup lime juice
Dump everything into the blender and give it a whirl. I stored mine in mason jars in the fridge.

Lone Star Park National Anthem Auditions Today
From the Lone Star Park website: The 18th annual Lone Star Park National Anthem auditions will be held on Tuesday, February 18, 2014 from 11:30 a.m. to 8:00 p.m. Auditions will be held outdoors (weather permitting) just west of the Winner’s Circle. On the day of the audition, please use Parking Gate 5 off Lone Star Parkway and park in the Preferred Parking Lot. Then enter through the East Entrance of the Grandstand.
Anyone interested in singing the National Anthem for Lone Star Park in
2014 must audition on February 18. Call (972) 263-RACE prior to February
10 to set up an appointment. Walk-ups
are welcome, however, those with an appointment will be given priority on
audition time. Lyrics must be memorized, and you will be asked to audition a cappella.
Vocalists, instrumentalists, duos, trios, groups and choirs are welcome to
audition. Your performance time must be two minutes or less. Also, as a
reminder, expect to hear a half second delay in the sound system during your
performance.
Those chosen to sing the
National Anthem on a live race day will be notified on or before March 21, 2014
with a written letter. Each person
selected to perform will receive four (4) box seats for live racing on the
performance date.
Performers Must Adhere to the Following Guidelines:
- Must be sung a capella or performed on an acoustic instrument
- Must be completed in two minutes or less
- Singers may not hold their ears to help with the delay
- Words must be memorized***
***My side note: If you don't know the correct words, please don't even get in the car to come down to Lone Star Park - and shame on you!***
